I came up with this baked salmon with quinoa surprise recipe out of creative necessity. You know how it is looking in the fridge sometimes – you see a whole lot of little bits of this and that that have to be eaten or pitched. Well, I hate pitching anything. It’s too much like throwing money down the disposal for me.
The first of my quinoa recipes (quinoa and grape salad) was a hit! In my last post I said how excited we were to learn about quinoa and ran straight out to buy some. I cooked it according to the directions on the package. It kind of does look like rice, but shaped like little beads instead. When the quinoa is almost fully cooked, little spirals pop away from the seed. It looks kinda cute. :) It took me about 15 minutes to prepare it, and I served it in this simple recipe for our first taste:
